Brussels Sprouts Quiche

A recipe created for Ari and Dhanji's wedding

This vegetarian dish feeds about 4 people and takes about half an hour to prepare with another 45 minutes in the oven.

Break the eggs into a bowl, add olive oil and flour until you have a smooth paste that would about cover the springform pan. Cut the feta into cubes of 0.7 cm and mix them in as well. Add a spoon of baking powder.

Peel and clean the brussels sprouts and cook them until they are almost done — you can pierce them with a fork if you use a bit of pressure. Cover the springform-pan with the puff-pastry dough and fill it with the brussels sprouts. Press lightly so there aren't any big holes.

Pour the dough over the brussels sprouts equally and use a fork to distribute the cheese and flatten the mass. Bake in the oven until golden brown, which should be about 45 minutes at 220 degrees celsius.
